Summer Fresh Rolls with HANAH ONE Cashew Dipping Sauce
These are one of my all-time favorite things to make in the summer! You can get creative and use whatever fruit or veg you’d like! HANAH ONE adds a robust flavor, but it also increases natural and sustainable energy for optimal performance and long-term health with a blend of 30 wild-harvested botanicals.
Makes about 20 fresh rolls
Ingredients
For the fresh rolls:
1 package of rice papers
1 mango, sliced
1 red bell pepper, julienned
1 carrot, julienned
¼ purple cabbage, thinly sliced
1 avocado, thinly sliced
2 Green onions, thinly sliced on the bias
Handful nori, ripped into small pieces
2 Tbsp sesame seeds
For the sauce:
½ cup cashew butter
1 Tbsp honey
1 Tbsp sesame oil
1 Tbsp coconut aminos
1 Tbsp HANAH ONE
1 Tbsp rice vinegar
1 tsp garlic powder
Squeeze of lime
Method
For the fresh rolls:
Fill a shallow bowl with warm water and set it aside. Dip the rice paper into the water for 10-15 seconds, remove from water and pat dry with a paper towel, and place on a clean flat surface. Add the mango, red bell pepper, carrots, cabbage, avocado, and green onions in the center of the rice paper. Sprinkle generously with nori and sesame seeds. Roll the rice paper and tuck in each side. Slice each fresh roll in half on a diagonal. Repeat with the remaining ingredients.
For the sauce:
Add all the ingredients to a small bowl and whisk together until incorporated. Add water as needed to thin it out. Serve with fresh rolls and enjoy immediately.
