Spring Soba Noodle Salad

This is one of my favorite things to make when the weather starts to get warm! It’s super easy to make and you can prep it ahead of time and have it in the fridge, ready to eat!

Ingredients

  • 1 pack of buckwheat soba noodles

  • 2 green onions, thinly sliced

  • 1 watermelon radish, thinly sliced

  • 1 sheet of nori, broken up into small pieces

  • 2 tbsp sesame seeds

  • a handful of fresh parsley, chopped

  • Japanese dressing, I used this one, you can also make your own dressing by mixing tahini, sesame oil, olive oil, and ginger!

Method

Cook the soba noodles according to the package then set aside. In a large bowl, add the cooked soba noodles, chopped green onions, watermelon radish, nori, sesame seeds, parsley and toss until well incorporated. Put the soba noodle salad in an airtight container and chill in the fridge for an hour before eating!
