Saffron Oats with Ashwagandha and Peaches

Ingredients  

•1/2 cup oats 

•1 cup water or nut milk

•3-4 stands saffron 

•1/4 tsp cinnamon 

•1/4 tsp cardamom  

•1/2 tsp ashwagandha 

•1 tsp honey 

•1/2 peach, sliced 

•Handful raspberries 

•1 Tbsp coconut yogurt 

•1 tsp pepitas 

•1 tsp hemp seeds 


Method 

In a medium sauce pan, combine the oats and water and bring to a boil. Reduce the heat to low and cook, stirring occasionally, about 5 minutes, or until the liquid is absorbed. 

Add the saffron, cinnamon, salt, ashwaganda and honey. Cook for about 1-2 minutes more. 

Transfer the oats to a bowl. Top with fresh peach, raspberries, coconut yogurt, pepitas and hemp seeds!
