Winter Massaged Kale and Radicchio Salad with Maple Dijon Dressing

Ingredients

• 1 bunch of kale, chopped

• 1 small head of radicchio, shredded

• juice of 1/2 lemon

• 1 tsp salt

• 1-2 tbsp walnut oil

• 1/4 cup walnuts, toasted

• 1/4 cup pecans, toasted

• 1/2 cup vegan Parmesan, grated

• 1 honey crisp apple, sliced

• salt and pepper to taste

For the Dressing

• 1/4 cup olive oil

• 1 tbsp walnut oil

• 2 tbsp apple cider vinegar

• 2 tbsp Dijon mustard

• 1 tsp maple syrup

• Salt and pepper to taste

Method

Place kale and radicchio in a large bowl with lemon juice, salt, and walnut oil. Massage kale and radicchio for 1-2 minutes until leaves become soft and supple. Toss in the walnuts, pecans, Parmesan, apple, and season with salt and pepper. Mix the dressing in a small bowl and pour over the salad. Serve and enjoy!
