Sprouted Oat and Banana Pancakes

These aren’t just any average banana oat pancakes! I snuck in a few special ingredients to elevate this recipe!

Ingredients highlights!

Sprouted oat’s 〰 I used sprouted oats because they are more bioavailable and are easier to digest compared to regular rolled oats!

Coconut yogurt 〰 Packed with probiotics and heathy fats!

Ingredients

  • 1 cup sprouted oats, I like this brand

  • 2 ripe bananas, mashed

  • 2 eggs

  • 2/3 cup coconut yogurt

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • 1/4 tsp cardamom

  • 1 tbsp tocos

Method

Add oats to a high speed blender and blend until you have a flour like consistency. Add bananas, eggs, coconut yogurt, baking soda, cinnamon, cardamom and tocos and blend until you get a smooth batter.

Using a 1/4 measuring cup, pour the batter onto hot pan. Once bubbles start to form, about 3 minutes each side, flip. Serve hot with fresh berries, butter and maple syrup!
