Nourishing Chia Pudding with Ghee

Ghee is one of my favorite ingredients to cook with. It has a rich buttery flavor and adds depth to any recipe. It also contains many nutritional benefits. This ghee from Hanah is grass-fed and made in small batches from the highly-medicinal milk of the sacred Vechur Cow. Ghee is clarified butter, which means it doesn’t contain lactose. It has healing properties like improved digestion, streghthens the immune system, supports gut integrity and hormonal balance! It’s packed with omega-3 and omega-9 essential fatty acids, vitamins A,D,E and K. Ghee is a wonderful beauty food as it nourishes the skin, hair and nails!

Prep time 10 minutes | Makes 2 servings

Ingredients

  • 3 tbsp chia seeds

  • 1 can coconut cream

  • 1 tsp vanilla paste

  • 1 tbsp ghee

  • 1 tbsp honey

  • 1 tbsp tocos

  • 1 cup coconut yogurt

  • 1/2 cup fresh berries

  • 1 tbsp pumpkin seeds


Method

Add the chia seeds, coconut cream, vanilla, ghee and honey to a sauce pot, whisking until well incorporated. Cook for about 3-5 minutes, stirring occasionally. Once it thickens, remove from heat and add in the tocos. Divide the chia pudding between two jars and top with coconut yogurt, fresh berries, coconut and pumpkin seeds!
