Raw Vegan Chocolate Truffles

I elevated this recipe by adding pine pollen for Valentines Day! Pine Pollen is a potent aphrodisiac and also offers hormone support. Some other benefits include enhanced metabolism, increased libido, supports detoxification of the liver, and supports endurance.

Ingredients

  • 25 dates, soaked and pitted

  • 1/4 cup maple syrup

  • 1/2 cup sunflower butter

  • 1 tsp vanilla paste

  • 2 tsp pine pollen

  • 1/4 cup coconut flour

  • 3/4 cup chocolate chips

  • 2 tbsp coconut oil

  • 2 tbsp rose petals

  • 1 tbsp flakey sea salt

Method

Line a baking sheet with parchment paper and set aside. Add the soaked dates, maple syrup, sunflower butter, vanilla paste, pine pollen and coconut flour to a food processor and mix until well incorporated, it should form a dough like consistency. Using a 1 tbsp measuring spoon, roll out the dough into a ball and place on the baking sheet. Retreat with the rest of the dough and place in the freezer for 20 minutes.

Add the chocolate chips and coconut oil to a pot and heat over low heat, stirring consistency. Once the chocolate is melted, remove from heat and allow to cool for a few minutes. Take the dough out of the freezer, using two spoons, drop a ball of dough in the chocolate and coat evenly. Place back on the baking sheet and repeat with the rest of the dough. Sprinkle the truffles with rose petals and flakey sea salt and put them back in the freezer for 1 hour.
