Pickled Watermelon Radish
Watermelon radish is one of my favorite vegetables! It’s not only beautiful but it also provides a host of health benefits and medicinal properties. Some of the benefits include high in Vitamin C, high in potassium, supports liver detoxification, and aids in digestion!
Pickling is a great way to preserve any vegetable! It also adds an acid element to any dish!
Ingredients
2-3 large watermelon radish, cleaned and sliced
300 ml apple cider vinegar
300 ml filtered water
1-2 tbsp raw honey
1 1/2 tsp sea salt
1 tsp juniper berries
1 tsp mustard seeds
1 tsp coriander seeds
1-2 bay leaves
Method
Using a mandoline or sharp knife, slice the watermelon radishes into discs. Add the water, apple cider vinegar, honey and salt to a saucepan and bring to a boil. Remove from heat and add the juniper berries, mustard seeds and coriander seeds. Place the watermelon radishes in a large Weck jar and pour the hot liquid over the radishes. Let cool, then cover and refrigerate.
